Lasan roti

1 cup mielie meal

2 cups cake flour

1 1⁄2 to salt

2 tablespoon ghee (Clarified butter)

Hot tap water to make dough.

Mix all ingredients. Make dough with hot tap water. Knead well. Roll round, not thin and cook on tawa. 

Makes 4 small rotis. For lasan roti mum doubled recipe.

Cut French chives finely

Heat about 1/2 – 3/4 cup ghee and oil mixed in a pot

Cut fresh garlic finely and add to oil. Fry for about 1 minute then add the chives. Add salt to taste. Add to crumbled Mielie meal roti.

3 brinjals boiled till soft

Once a little cool. Peel skin and take out some seeds. Mash. Then add inkomasi (about 2 cups), a dash of milk, 1 small tin nestle cream and salt to taste.

4 carrots peeled and cut into sticks.

1/2 cucumber cut into sticks.

One on side of the dish mix together:

1 teaspoon fine red chilli powder,

1/2 teaspoon coarse red chilli powder

1 teaspoon crushed garlic

1 teaspoon chilli garlic paste

2-3 tablespoons oil

1-2 teaspoons salt (or to taste)

1 teaspoon cumin powder

Mix masalas. Then mix into carrots and cucumber. Add finely chopped coriander.

2 big packets fresh coriander leaves from @picknpay

Whole green chillies (depends on how hot you want it)

1 tablespoon coconut

2 whole big garlic cloves

Salt to taste

1/4 teaspoon cumin powder

1 small onion

Liquidize with water

Strain water

Must be strained properly

Press water out with a tablespoon

Then add lemon juice (about 2-3 tablespoons)

Serve with lasan roti

1 chicken cut into portions

Wash & drain

Marinate with:

2 tablespoons @cloverwaybetter cream o’ naise

2 teaspoons peri peri masala @sujees_masala

2 tablespoons double cream yogurt

1 teaspoon salt

1 teaspoon fine red chilli powder

1 teaspoon coriander powder

1 teaspoon cumin powder

1/4 teaspoon tumeric

Add some flaked almonds

A pinch of saffron

2 tablespoons lemon juice

1 sachet tomato paste

Allow to marinate

In a pot heat butter

Add 1-2 cinnamon sticks

& 2 cardamom pods

Place marinated chicken in pot

Cook on low heat add water as needed.

Serve with garlic naan.

1/2 kg fillet steak slices

Washed & drained.

In a pot heat a slice of butter about 2 tablespoons

Add:

2 tablespoons Nandos pepper sauce

2 tablespoons lemon juice

1 teaspoon @inapaarmanskitchen lemon & black pepper seasoning

Aromat to taste

A sprinkling of @robertsonsspice mixed herbs

Allow to sizzle and move off stove. Cook

Dip each piece of fillet in marinade and cook on low.

Add 1/2 – 3/4 cup of sour cream.

Cook for a bit.

Serve with onion rings.

Enjoy.

Put some water in a pot and allow to come to a boil. Add @pastajoy fusilli pasta. Add a dash of oil and 1 teaspoon salt. Boil for 7-9 minutes as instructions on packaging.

Drain. Leave about a tablespoon of the water in pot. Add pasta back to pot.

Add 1 tablespoon @cloverwaybetter cream o’ naise,

A sprinkling of @inapaarmanskitchen lemon and black pepper seasoning

3 tablespoons creamstyle corn

1/4 cup sour cream

1/2 – 1 teaspoon green masala @sujees_masala

Toss and serve warm.

Enjoy.

250g butter,

1/2 cup castor sugar,

1-2 cups coconut,

1 teaspoon vanilla essence,

1 cup chopped colored almonds, Flour as required to make soft dough.

Beat butter till light and fluffy. Add in sugar and beat. Mix in other ingredients. Make a soft dough with cake flour.

Roll into logs. Cut into slices & bake. Allow to cool. Dust with icing sugar.

250g butter

1 cup maziena

3/4 cup icing sugar

2 tablespoons cocoa

1 teaspoon baking powder

1 egg

Crumbled whispers (crumble fine if you nozzling biscuits)

Flour as required

Beat butter till white. Then add in the balance of the ingredients besides the cake flour.

Add in cake flour as needed. (I didn’t measure I just added till the dough was soft and not sticky)

Pipe onto trays. Bake in a preheated oven @ 180.

Decor with melted dairy milk and crumbles of whispers.

3/4 cup castor sugar

Beat till light and fluffy

Add in 1 egg

1 & 1/2 cups maziena (corn flour)

Flour as required

Roll out and cut like a tea bag

Bake in preheated oven at 180 degrees till golden brown.

Dip in chocolate and decor.

Thread cotton or ribbon 🎀 through.
