This recipe is aptly named…the cupcakes turn out nothing short of amazing! 😍😍😍 They are moist, yet light and pillow.

I tried these cupcakes with a few variations on the buttermilk. I substituted for plain yogurt and still got great results. It’s flop proof 😊

1¼ cups flour

1¼ teaspoon baking powder

½ teaspoon bicarbonate of soda

½ teaspoon salt

2 eggs

¾ cup sugar

1 teaspoon vanilla essence

½ cup oil

½ cup buttermilk

1. Sift together dry ingredients. Set aside.

2. Beat eggs till creamy. Add sugar and beat for half a minute.

3. Vanilla and oil and beat for a minute.

4. Alternately add buttermilk and flour mix to the oil mix till all are incorporated.

Fill muffin cups to half full for flat cupcakes. This should yield about 15.

Bake 180°C for 14-16mins till done.

Test with a toothpick for doneness 😘

I’ve shared the link to the recipe

Below I’ll share how I made it with my amendments

4-5 chicken fillets washed and drained

If you making 4-5 fillets half the marinate recipe. I had a lot leftover and didn’t use all

3/4 cup freshly squeezed orange juice

2 tablespoons olive oil

1/3 cup freshly squeezed lime juice

1 tablespoon lime zest

1 teaspoon cumin powder

2 tablespoons soya sauce

1 teaspoon crushed garlic

1/2 cup chopped cilantro

1 teaspoon lemon pepper

Salt to taste

1/2 teaspoon chicken spice

1 teaspoon fine red chilli powder

1/2 teaspoon garlic salt

Cook on low heat. Or grill in oven. Or Braai.

I cooked in a pan. Continue basting all the time.

Then I put into a griddle for a bit.

I then added back to pan and basted with sauce.

Serve with basmati rice and salsa.

For the salsa

1 Penney strawberries washed and chopped

1/4 red onion chopped

1/4 red pepper chopped

1/4 avo chopped

1/4 cucumber chopped

Mix together

Add a dash of lemon juice and season

1kg rack of chops

1 & 1/2 tablespoons soya sauce

1 & 1/2 tablespoons lemon juice

1 & 1/2 tablespoons brown vinegar

3 tablespoons Worcester sauce

1 teaspoon black pepper

2 teaspoons salt

1 teaspoon lemon pepper

1 tablespoon sujees peri peri masala

1 teaspoon mustard powder

3 tablespoons tomato sauce

Marinate rack of chops. Cook in pressure cooker for 10 minutes. Then turn over and cook for 5 minutes.

If cooking on stove cook on low heat. Add water as necessary. Cook till soft and tender. Serve with fries, salad and garlic rolls.

1 chicken cut washed and drained

1 medium onion thinly sliced

2 tablespoon ghee (Clarified butter)

1 cinnamon stick

1 cardamom pod

2 cloves

½ teaspoon ginger garlic

½ teaspoon chilli garlic paste

1 teaspoon chilli powder

1 teaspoon dhana

1 teaspoon jiro

½ teaspoon tumeric

Salt to taste

Grounded fresh coriander leaves

¼ cup water

1 tablespoon gram flour (chana flour)

2 to 3 cups milk

½ cup dessicated coconut

1 tablespoon chopped coriander leaves

1 tablespoon crushed chillies roasted in a pan till brown

250g spaghetti broken into small pieces and boiled

Samoosa pur cut into strips fried till golden

METHOD

Method

Saute onion, cinnamon, cardamom and cloves in ghee (Clarified butter) till onion is soft.

Add chicken, ginger garlic, chilli garlic, chilli powder, dhana, jiro, tumeric, salt and grounded coriander. Braise well lower heat and cook till chicken is tender.

Mix water and gram flour to a paste and add to chicken. Braise for minute.

Stir in milk and coconut and simmer for about 10 minutues.

Garnish with coriander leaves.

To serve

Place some spaghetti in bowl

Pour soup over

Garnish with pur strips

Top with finely cut onion and green chilli mixed in vinegar flavoured with s&p.

I used coconut milk instead of milk and coconut

1 cup flour

1/2 cup sugar

3 tablespoons cocoa powder

2 teaspoona baking powder

1/2 teaspoon salt

1/4 cup chopped nuts of choice

50g chopped chocolate

1 egg

1/4 cup oil

2/3 cup milk

Mix together dry ingredients. Add in chocolate and nuts. Whisk liquids together n mix into dry ingredients. Pour into a greased 25×30 cm pan n bake for 10-15min. Don’t overbake or brownie will be dry. Serve with ice cream n chocolate sauce.

Js mixed by hand.. Dry ingredients first.. Then whisk wet ingredients and add.

1kg loin chops trimmed, washed and drained.

In pot or pressure cooker add 1 tablespoon oil. Add 2-3 medium/big tomatoes cut into wedges. Add chops and season with salt and white pepper. Cook till done. I cook for 10 minutes in pressure cooker.

Serve with cheesy mash potato.

8 medium potatoes peeled and cubed.

In a Corning Ware or microwave safe bowl add potatoes, water and salt. Microwave for 10-15 minutes till potatoes are soft to mash.

Drain and mash potatoes.

For soft fluffy mash add to mixer and mix. Add 2 tablespoons butter and a dash of milk.

Add grated cheese. Microwave a few minutes. Mix cheese in. Can be scooped and served.

Enjoy.
